What Is Morimoto by Sea on Holland America?

The Global Fresh Fish Program brings local flavors from port to plate.
Morimoto by Sea is the Japanese-inspired dining experience from Iron Chef Masaharu Morimoto, Holland America’s Global Fresh Fish Ambassador. It comes in three formats: a full restaurant, a pop-up and a sushi bar. All three share a name and a chef, but the menu, setting and ships differ, so the sections below break down each one.
Morimoto by Sea Restaurant on Nieuw Amsterdam

Dinner with a view: the Morimoto by Sea restaurant, exclusive to Nieuw Amsterdam.
The full Morimoto by Sea restaurant is exclusive to Nieuw Amsterdam. What sets it apart is the dedicated setting and the full sushi and sashimi menu, which sits alongside seafood and meat entrées, sides, desserts and a drinks list. It suits a full evening built around Chef Morimoto’s cooking, from nigiri and signature rolls to a Fresh Catch “Port to Plate” entrée.
Sample dishes from the restaurant menu include:
- Appetizers: Popcorn Shrimp, Pork Gyoza, Sticky Ribs, Taco Two Ways
- Sushi & sashimi: nigiri, sashimi, Chef’s Combination
- Signature rolls: Shrimp Tempura, Lobster Tempura, Tako Yaki, Aburi Salmon
- Mains: Fresh Catch “Port to Plate”, Morimoto Buri-Bop, Miso Lamb Chop, Butter Poached Lobster Tail
- Desserts: Chocolate Sphere, Strawberry Panna Cotta, White Chocolate Lime Ganache, Sorbet Trio
Chef Morimoto’s own wines and sakes are on the list too, including Morimoto Dream Brut Rosé, Morimoto Grgich Hills Chardonnay and Cabernet Sauvignon, and four sakes: Junmai, Junmai Ginjo, Junmai Daiginjo and Sparkling Nigori.
In addition to her full restaurant, Nieuw Amsterdam has a sushi bar for quick sushi bites, and Morimoto sushi is available at Tamarind as well.
Morimoto by Sea Pop-Up on Holland America Ships

The Morimoto Sushi Mori: a chef-selected sushi assortment on the pop-up menu.
The Morimoto by Sea pop-up is available on every ship except Nieuw Amsterdam. It takes over Tamarind or Pinnacle Grill at least once per cruise, bringing a Morimoto dinner to ships that don’t have the full restaurant. As a specialty dining experience, it’s offered for an additional charge.
The pop-up’s sample menu lists the same mains, sides, desserts and drinks as the restaurant, so you can build a similar dinner without sailing on Nieuw Amsterdam. It also features the Morimoto Sushi Mori, a chef-selected assortment of sushi inspired by the popular pop-up experience, with salmon and hamachi nigiri, ebi asparagus maki, aburi spicy tuna maki, a Dungeness crab California roll and lobster tempura futomaki. A vegetarian option is available on request.
Sample dishes from the pop-up menu include:
- Appetizers: Morimoto Sushi Mori, Popcorn Shrimp, Vegetable Wonton, Lobster Miso Soup, Taco Two Ways
- Mains: Tan Tan Noodles, Grilled US Prime Rib, Orange Chicken, Japanese Curry
Chef Morimoto’s wines and sakes are available at the pop-up too.
Morimoto by Sea Sushi Bar on Koningsdam, Nieuw Statendam & Rotterdam

Poke, your way: the Morimoto by Sea sushi bar offers a poke bowl with your choice of marinated salmon or tuna.
The Morimoto by Sea sushi bar is on all three Pinnacle Class ships: Koningsdam, Nieuw Statendam and Rotterdam. Chefs prepare sushi in front of you at a counter that seats 12, with additional table seating nearby. The menu is à la carte, so you choose exactly what you want, whether that’s a few pieces of nigiri or a spread of rolls, small plates and entrées.
Sake takes the spotlight here. The menu opens with six selections: four from Chef Morimoto’s own line (Junmai, Junmai Ginjo, Junmai Daiginjo and Sparkling Nigori) and two from Momokawa, giving you plenty to pair with the sushi.
Sample dishes from the sushi bar menu include:
- Appetizers: Toro Tartare, Tuna Pizza, Sticky Ribs, Pork Gyoza
- Nigiri & sashimi: seasonal white fish, maguro tuna, hamachi yellowtail, kampachi amberjack, unagi
- Signature rolls: Shrimp Tempura, Lobster Tempura, Tako Yaki, Aburi Salmon, Spicy Tuna
- Mains: Angry Lobster Pad Thai, Chicken Katsu with Japanese curry, Poke Bowl
- Dessert: White Chocolate Lime Ganache
The sake list includes Chef Morimoto’s own Junmai, Junmai Ginjo, Junmai Daiginjo and Sparkling Nigori.
