The town of Cadillac was founded in 1280 to serve Jean I de Grailly, as a river port for his castle. Directly across the Garonne River from Sauternes, Cadillac is famous for its sweet dessert wines under the Cadillac Appellation d'Origine Contrôlée (AOC) designation. No surprise, as it is part of the Bordeaux wine growing region.   • The Château de Cadillac (Cadillac Castle) is a centerpiece of the town; the actual castle, moat, and garden are classified as monuments. Some of the main attractions when touring the castle are its paved courtyard, restored chapel, and wine tasting rooms. Part of the castle's past wasn't as illustrious, as it housed a women's prison for a time.
     
  • The Collégiale Saint-Blaise, part of the Parish of Saint-Martin de Cadillac, is where the first duke of Épernon and his duchess are buried (Jean-Louis de Nogaret de la Valette and Marguerite de Foix-Candale). The duke drew up elaborate plans for this mausoleum, which was later ransacked during the French Revolution.
     
  • In an area known for its wines, it's easy to find a wine tour. One of the things you'll learn about creating the distinct taste of Cadillac's sweet wines (most notably Sauternes) is its unique process. The grapes for this wine are purposely afflicted with "noble rot," which causes the grapes' raisin-like decay as the water evaporates.
