Celebrity Cruises builds upon the “Solsticizing” refurbishments of its Millennium Class of ships with an entirely new refurbishment designed to usher in a new level of “Modern Luxury” aboard the Celebrity Infinity and Celebrity Summit.
First there was live grass at sea, and then the Lawn Club and a unique grilling experience. Next comes the “Rooftop Terrace” – a completely new venue debuting aboard the Celebrity Infinity. The Rooftop Terrace will combine movies and food in a large outdoor space featuring a movie screen, surround sound and plenty of space for relaxing. In addition to the Rooftop Terrace venue, the Celebrity Infinity will also receive updates to the Penthouse and Royal Suites, and the existing S.S. United States specialty restaurant will also be updated and converted to the Tuscan Grille, one of Celebrity’s most popular signature dining venues. Plus, both ships will receive further updates to their Solarium, portrait studio, casino and future cruise sales office.
The Celebrity Infinity is currently dry-docked in the Bahamas undergoing these refurbishments, and the Celebrity Summit will receive her updates in March 2016. Continue reading to learn more about the key aspects of each refurbishment.

For the very first time in all of the cruising industry, an American female will take the helm of a cruise ship. The 37 year old Captain, Kate McCue, will command the Celebrity Summit starting in August 2015. The San Francisco native has over 15 years of experience behind her including sailing Europe, Asia, Australia, the Caribbean, the Pacific Northwest and Alaska, and along the Panama Canal. Captain McCue has also served as a maritime leader while sailing several transatlantic and repositioning cruises, and played a role in the revitalization of ships in Singapore. Captain McCue has held numerous roles obtaining more responsibility from a cadet position to her most recent role as Master Mariner for Royal Caribbean.
“From the first time I met Kate, I looked forward to this moment, when I could extend my congratulations to her for being such a dynamic and highly respected leader who will continue to pave the way for women in the maritime industry,” said Lutoff-Perlo, CEO Celebrity Cruises. “Of all the great moments throughout my career, this is at the top of my list. Summer, and especially August, is the time of year when you find the most gorgeous, fresh vegetables and fruits in the farmer’s market. Gardens are bursting with sunny tomatoes, crisp peppers, cool cucumbers and all kinds of bright, green herbs. If you have your own backyard garden, I’m sure that like me you find all the plants producing at once and all of a sudden you are inundated with more produce than you can possibly use! Not a terrible dilemma, to be sure, but after all the hard work of planting, weeding, watering and keeping the darned bugs and bunnies out of your plants, you don’t want a thing to go to waste. I tend to make a lot of grilled vegetables as a side dish, pastas with sauteed tomatoes, onions, garlic, peppers, zucchini, etc., chop and freeze what we can’t eat, and make tons of veggie soups.

I am a fishy person. Not in the sense that I’m a questionable or odd person (although some might disagree), but in that I really love fish. Not only do I have a koi pond in my yard and two large tanks of tropical fish in my home, but I married a man with the last name of Fish – no joke. I am also from Spain, a country with a great love of fine cuisine and full of seafood lovers; no surprise, since we can pluck the freshest fish and shellfish right from the surrounding waters of the Mediterranean Sea and Atlantic Ocean.
After perusing Celebrity’s cookbook called Excite the Senses; A Culinary Journey with Celebrity Cruises, I chose to try a colorful and healthy grilled fish recipe called “Peruvian-Style Grilled Snapper.” Peruvians have never been known to stray away from a spicy dish, and this recipe has a fresh and fiery marinade that penetrates the fish with a lovely piquant flavor. Celebrity Cruises has introduced two new dining venues only available on the Celebrity Equinox, which is spending the summer sailing through the Mediterranean (see below for a fabulous cruise opportunity). The new venues are on top of their tried and true staples like Murano, Silk Harvest and Tuscan Grille.
Gastrobar is where you can expect to find delicious bar food, with Celebrity Cruises’ sophisticated twist. The venue has 40 handcrafted boutique beers available, along with a variety of wines.
