Holland America Line Dining
Holland America’s is devoted to providing guests with a top-notch and unforgettable culinary experience. Their culinary efforts are led by master chef Rudi Sodamin. Under his guidance, the cruise line has received several accolades. Chef Sodamin also runs the Culinary Council, a panel of 15 chefs who provide insight, opinions and expertise on the food and its onboard presentation.
Main Dining Room
Each of Holland America’s ships has an elegant main dining room where you will have a variety of menu options, including vegetarian and regionally-inspired dishes. These menus include five courses. Holland America has “As You Wish Dining,” which means you can choose to dine any time from 5:15 pm to 9 pm, or you can have a traditional dining time, either early seating at 5:45 pm or main seating at 8 pm.
Pinnacle Grill
An intimate dining experience, the Pinnacle Grill has been described as the finest at sea. Here you’ll dine on Bvlgari china and choose from a world-class wine list. A $25 per person fee is charged.
Tamarind
The exotic flavors of Asia are delivered fresh and flavorful every night at Tamarind. From dim sum to sushi and curry, you’ll have lots of options here. A $15 per person fee is charged for dinner, but lunch is complimentary.
Dive-In
Dig in to a freshly grilled burger or a Nathan's Famous hot dog while relaxing by the pool at this classic burger joint serving the "best burgers at sea."
New York Pizza
Enjoy classic New York pizza by the pool. Serving 9" custom made-to-order pizzas, New York Pizza is sure to satisfy your craving for a delicious slice.
Blend
In an intimate setting, Blend teaches passengers about fine wines, offers tastings and allows the unique experience of blending one's own bottle to take back to your stateroom.
Grand Dutch Cafe
Fast casual eatery paying homage to Holland America's Dutch roots, the Grand Dutch Cafe offers sustenance from a hot coffee to apple and bacon pancakes, as well as classic Dutch beverages. Specializing in Dutch and Belgian beer, this café is the perfect place for an afternoon pick-me-up. .
Canaletto
Named after the famed Venetian artist, Canaletto serves three courses of Italian masterpieces. A $10 per person fee is charged.
Lido Restaurant
Offering breakfast, lunch and dinner, this buffet restaurant has something for everyone. At breakfast you’ll find made-to-order omelets and fresh squeezed orange juice. Lunch includes various cuisines from around the world. For dinner, the buffet features selections from the main dining room menu.
Le Cirque
One night per sailing, the Pinnacle Grill turns into Le Cirque, one of the most acclaimed restaurants in America. Le Cirque has received the James Beard Award for Restaurant of the Year. A $39 per person fee is charged.
De Librije
On certain ships, the Pinnacle Grill is transformed into De Librije, a restaurant from The Netherlands. The five course menu begins with North Sea scallops. A $69 per person fee is charged (add another $20 for a wine pairing).
Terrace Grill
All the delicious snack foods you could ever want are here at the Terrace Grill on Holland America’s lido deck. There are pizzas, hamburgers, sandwiches and gourmet hot dogs. The Terrace Grill is the perfect spot for lunch.
Master Chef’s Room
This exclusive seven course menu served in the Pinnacle Grill is only available on the ms Nieuw Amsterdam. An $89 per person fee is charged, and this includes wine pairing.
Culinary Council
World renowned chefs bring their unique styles from all over the world to curate a one-of-a-kind dining experience aboard Holland America. As of November 2018, Holland America's Culinary Council included:
- Rudi Sodamin - The Master Chef and innovator behind Holland America's Rudi's Sel de Mer, a French restaurant with a modern twist.
- Jonnie Boer - Head chef of De Librije, a 3-star Michelin restaurant in the Netherlands.
- David Burke - American chef with a contemporary style, Burke has been seen on television shows such as Top Chef Masters and Iron Chef America.
- Jaques Torres - Master chocolatier and executive pastry chef at Le Cirque in New York City, Torres brings his French-inspired desserts to sea.
- Elizabeth Faulkner - Hailing from San Francisco, this Food Network contributor has won first place in the World Pizza Championships in Italy.
- Ethan Stowell - After disrupting the restaurant scene in Seattle with a number of highly rated restaurants, Stowell was named to the list of "Best New Chefs in America" in 2008 by Food & Wine magazine.
- Andy Matsuda - With over 3 decades of sushi experience, Matsuda founded the Sushi Chef Institute in California and brings his expertise to sea, where his skills will be highlighted by the highest quality fresh seafood.
